I had a similar problem tried everything
I have a 04 350z and my radiator fans locked up there was a recall on the car but the previous own didn't do it so I have them replaced. Check and see if your fans are turning on it could be the same issue.

Well I can tell you I just fixed the intermittent overheating, warming up to 60-80% never in the red. My mechanic squeezed the hose and heard air passing through the radiator cap so we put a new Nissan cap. The thermostat was getting stuck sometimes. Replaced it with one from the dealer and the car is running perfect solid. The bleeding wasn't that bad. It's true these cars need to be "burped" sometimes. I'm happy to have new coolant in there so a complete flush is checked off. Good luck with your issue, although I started to get scared it might be the head gasket for a second because it was hard to diagnose. Been running perfect for months now.

Air bubbles is what caused my overheating. Never bled it, but just let it run it's course. They appeared to happen after winter storage. (EDIT: I should say that I did refill the radiator fluid as quite a bit of it bubbled out.)
I think there's still a few bubbles left in there, so I may need to bled. I was in a car cruise -- more like a car parade, driving slower than 1st gear at idle -- and it almost overheated so I exited the cruise and was fine at higher speeds (30 mph).
