We get video recording now via Cycorder. Here's the beta with no audio yet. The developer is coming out with an update within the next week or so with audio. The videos quality is pretty good for a camera phone. Here's a sample I made:

I also have Intelliscreen on mine also. When on your lock screen, it has a feature called Intellidial. You can activate Intellidial by pushing the Menu button while on the lock screen. From there, it will take you to a coverflow of all your favorite contacts that & make a call from there. You won't have to unlock. Here's what it looks like.

MXTube is also a great app that allows the user to download Youtube videos at full quality & save them to the iPhone. I never use the Youtube app anymore that came with the iPhone.
These are just a few of many apps that Apple will never allow in the Appstore.
