Default POT ROAST for dinner!!!



Ingredients
• 1/4 cup extra-virgin olive oil
• 2 cups all-purpose flour
• 2 to 3 pounds beef chuck shoulder roast, cut into 2-inch pieces (this cut is also called chuck shoulder pot roast and chuck roast boneless)
• Sea salt and freshly ground black pepper
• 1 bottle good quality dry red wine (recommended: Burgundy/Pinot Nior)
• 8 fresh thyme sprigs
• 6 garlic cloves, smashed
• 1 orange, zest removed in 3 (1-inch) strips
• 1/4 teaspoon ground cloves
• 2 bay leaves
• 1 tablespoon tomato paste
• 2 1/2 cups beef stock
• 9 small new potatoes, scrubbed clean and cut in 1/2
• 1/2 pound carrots, peeled and sliced
• 2 cups frozen pearl onions, a large handful
• 1/2 pound white mushrooms
• 2 Stalks Celery
• 1 Yellow Onion
• 1/2 pound Green Beans
• Fresh flat-leaf parsley, chopped, for garnish



Cut the beef into portions season with salt and pepper dredge in flower and then brown in Dutch Oven




After all meat is browned remove to a separate plate. Then add miripoix (diced 1 carrot, onion, and 2 celery stalks.



cook for about 5 mins or until soft



then add wine and deglaze scraping all of the bits of tasty goodness off the bottom of the pot. then add beef stock.



cook for about 5 mins or until liquid comes to a boil. then add tomato paste, bay leaves, thyme, cloves, orange zest, and garlic



then add beef and bring to a simmer. then put pot into 325 degree oven for 2 hours

while the beef is cooking cut up remaining vegetables.




then blanch the pearl onions to remove skin.



after the 2 hours have elapsed remove Dutch Oven from the oven. remove beef to a separate plate and then strain cooking liquid into a large shallow dish. i used a lasagna dish. then put the dish of cooking liquid into refrigerator or freezer for a half hour to 1 hour. this will make it much easier to skim fat from the cooking liquid. this step is not necessary, but removing excess fat is obviously more healthy.




after you skim the fat then add the beef and vegetables back to the Dutch Oven and add cooking liquid and return to oven for 45 mins.



after 45 mins remove from oven serve and top with some flat leaf parsley. i like to serve this with some nice crusty beard.

i really liked it. things i would do differently. i would NOT use the ground cloves or orange zest. it gave it good flavor, but i think it would be better without.

now time for clean up.
