1 pack of chicken thighs skin removed
1 pack spicy Cajun style sausage chopped
3 cans red kidney beans
1 large onion chopped fine
3 minced garlic cloves
1 large green bell pepper chopped
32oz Chicken Stock
12 shakes of hot sauce
2 tbs olive oil
Salt to taste
Pepper to taste
¼ cup of flour (for roux)
¼ cup olive oil (for roux)
Directions
Place pot over high heat, add olive oil then onion and bell peppers. Sauté for about 5 minutes then add sausage. Cook for 2 minutes constantly stirring then add garlic and cook for another 2 minutes. Remove from heat.
In a separate pot or pan over med high heat add ¼ cup of olive oil. Once oil is hot add flour and whisk until totally incorporated. Moving on and off heat whisk until roux is a deep golden brown. Once desired color is reached slowly whisk in about 2 cups of chicken stock.
Return main cooking pot to the high heat and add roux and stock mixture and remainder of chicken stock. Then add chicken thighs to pot and hot sauce. Bring up to a boil then turn heat to low and let simmer for about an 45 minutes. Finally add beans and simmer for another 15 minutes.
Serve over bed of white or brown rice.

Oh yea, you should have used Tobasco sauce and some Abita beer for some real Louisiana taste
i didnt use any beer to cook with. really? i should use tabasco? the hot sauce i use was pretty vinegary and has a lot more flavor than tabasco.

...tabasco has got to be the lowest hot sauce on the ladder for me. there are so many awesome hot sauces out there, it's such a shame to use the cheapest one with the worst consistency and flavor...

After a bazillion phone calls, I finally found a place that carries Andouille up here. Called a Cajun restaurant and they didn't even know where to get it! Midwest is kinda lacking in Cajun food stuffs.
