Smile Weeknight Dinner: Fried Tilapia, White Rice, Mixed Veggies

Start your rice first because it will take longer than the fish and you everything to finish at the same time. Bring it to a boil then let it simmer. Flame height for a gas stove is shown:

Lay your fish out and season with your choice of spices. I used some pepper, garlic/onion powder, and old bay:

These pics show how light the seasoning is one after the other so you get an idea of how much to use:

Then I like to take my hand and moisten it with water to pat the seasoning into the meat:

Heat up a few tablespoons of oil. Just enough to cover about 1/4 of the fish when it is in the pan:

This is what the flame should be like for a gas stove and a stainless steel pan:

Next I use this flour my friend brought back from SC that is preseasoned and put it in a bag with the fish:

Once the oil is at temp, add the fish. Be careful!:

Checking the rice to see if the water is absorbed:

The fish should only need about 4-6 minutes on each side. This can vary by pan and stove type:

Rice is done, so fluff it up with a fork. Get it as loose as possible without mashing it up:

I used Frozen veggies so I just seasoned them with Lemon Pepper ana a lil garlic powder, put them in a container with a few tablespoons of water to steam them and they are done. Toss in a salad and some bread sticks and you're GTG:

Thirty minutes total time to eat a decent meal and it was cheaper then Mickey D's for two people.

Thanks Rick. I forgot to add that you should drain the fish on a paper bag or paper towels..

Phreak, I followed your directions and made a great dinner last night! Fried Tilapia, Rice with Mushrooms, and Pan-fried asparagus.
It was my second time EVER cooking... and the fish came out, GREAT!
Thanks Phreak! Post more easy to make meals

Yeah, it was around 10". The deckhands said the minimum was 5" or 6", I forget. Some lady bagged one that was way shorter than that one.

20" minimum here in FL! you get caught with that down here, they would take your freaking boat away.
