Jamaican Oxtails Recipe
INGREDIENTS :
1/2 lb of oxtails
paprika
chopped scallions
chopped onions
chopped garlic
cooking oil
1 table spoon jamaican browning
1 can butter beans
Season Oxtail with paprika/and or desired seasoning with chopped onions, garlic and scallions
heat cooking oil in pressure cooker
Add seasoned Oxtail to pressure cooker covering oxtail with jamaican browning
brown oxtail on each side.. fry lightly until browning is cooked into oxtail.. do not cook too long
Add water to pressure cooker .. fill about half way of the pot
Cook Oxtail in pressure cooker for 10 mins then run cold water over pressure cooker until the pressure releases
remove oxtail from pressure cooker to sauce pot with fresh water to ensure the oily water is removed
cook oxtail in sauce pot for an hour or until meat is cooked..
Add butter beans and cook for 5 mins more
Serve with white rice and fried plantains

1/2 lb serves two easy.. but if you want more.. you can step it up.. usually when i buy 1/2 lb its about 6 to 8 pieces

Well here in the States we mostly use cow tails instead of ox but yet restaurants call it oxtails when you order. You should try it, very good stuff
