Default Fried Chicken, mash potatoes, string beans, corn(yeah i had to do it)

INGREDIENTS :
  • Chicken (Amount is up to you)
  • paprika
  • chopped scallions
  • chopped onions
  • chopped garlic
  • cooking oil
  • potatoes (Amount is up to you)
  • corn (Amount is up to you)
  • string beans (Amount is up to you)
  • Corn Starch (thanks jeffie)
  • beaten egg
  • butter
  • salt
  • black pepper
  • milk
  1. Season Chicken with paprika/and or desired seasoning with chopped onions, garlic and scallions
  2. heat cooking oil in frying pan
  3. Add Corn Starch to a bowl for breading your chicken
  4. Add beaten egg to a seperate bowl
  5. Cover seasoned Chicken with beaten egg then dip in corn starch and cover fully (most people use flour to fry their chicken, but jeffie gave me a tip on corn starch and it comes out much crispier and tastier than with flour
  6. Add Corn Starched Chicken to frying pan and cook until blood is gone from the inside of the chicken, at some point you may see blood coming from the top of the chicken from the bone marrow. You may use a knife to cut slightly into the chicken to see if its cooked.. keep turning chicken while frying so it doesn't burn on either side. How High or How Low of a flame will depend on your stove (Gas or Electric) ... don't be afraid to experment over and over till you get the perfect fried chicken
  7. Peel Potatoes and cut into small cubes
  8. Add Potatoes to Sauce Pot with boiling water
  9. Cook Potatoes till slightly soft, but not too soft
  10. Strain Cooked potatoes from sauce pot into bowl..
  11. Add butter, salt, pepper and a little milk to bowl
  12. Crush potatoes then whip potatoes.. keep adding milk until potatoes are at desired mash potatoes.
  13. Boil corn in seperate sauce pot with water and a little salt
  14. Boil string beans in seperate sauce pot with water and a little salt

Looks delicious. I love 'soul food'. I like the tip about corn starch instead of flour. I'll have to try that. You think it would work equally well for other fried dishes (fish, okra, etc)?

i know he told me to do it with my general tsao chicken.. i couldn't get it crispy with the flour.. and it worked like a charm.. so i guess anything you want crispy it should work

one day i'm going to try it with my gf's mom's Fry Daddy.. which is basically a deep fat fryer.. that should make it even better

ok, i tend to bake my food, and have used a some oil's before. Is it best to use a skillet with what looks to be 1/5" oil to fry or use a "deep fry machine"?

the crisp on that chicken looks so good. you should've done some more upclose shell shots when it's all glistening and golden.
