It's football season and therefore guacamole and chip season. A lot of folk buy those mixes and fake guac for the weekend gathering and that is just wrong. Here's a great recipe for "real guac" that takes like 5 minutes.
6 avocados
1 container prepared pico da gallo (available in any supermarket vegetable section)
2 limes
salt and pepper to taste.
Cut the avocados in half, remove the pits and in a large bowl smash half of them with a fork. Cube the other half in 1/2" size cubes and add.
Add the prepared pico da gallo to taste (about 1/2 container) which is merely diced tomato, diced onion, diced jalapeno and cilantro.
Add juice of 2 small limes and stir without breaking down chunky avocado. It makes like a quart....
Serve with chips or on grilled burgers or however else you'd serve some awesome real guacamole.
(Ralphs currently has avos on sale for 47 cents so I made this for like 5 bucks for a huge amount. it would have cost three times that had i bought it
When are you going to start posting over my place? lol
For straight up guac just mush some avocados up, add minced onions, minced garlic, and minced jalapeno into it, then lime. Lots of salt and call it a day.
If you're pressed you can do salt, onion powder, garlic powder, red pepper/cayenne pepper and some lime/lemon or worst case use that crap stuff that comes in the plastic bottle, the #1 thing I wouldn't want to skip on is the lime.
just keep adding stuff and tasting it. Depending on the ripeness of the avocados you will need more/less
You guys are real chefs so I'm concerned...everyone gave me ish for not saying how I cleaned the soft shell crabs... jk
pre-made pico for the win btw. makes the guac a whole lot quicker.
There's no need to put pico in guac unless you like the tomato mixture, but at that point why? pico is soooo easy to make and much better when fresh.
I'm pretty much the only person to post over there and I manage/wait at a pizza place. I have ZERO chef skills other then doing what you do, enjoying to make good food. That's why its called HANDS ON kitchen, nothing has been taught its all from hands on.
I hate Sanda as with rachelle ray, anyone who is willing to use premade biscuit dough for pizza crust will never EVER have any respect from me, you might as well use ketchup for tomato sauce while you're at it.
I've tried 2 different pico de gallo pre made salsas at a party and both were really bad, too wet, and just not as fresh as I would like.
chop up a tomato
onion
jalapeno
cilantro
lime
salt
Some people like too add a touch of sugar to it. I will do it if the tomatoes are lacking in any sweetness, off season I try to use cherry or grape tomatoes so no sugar is needed.
As for as guac, I really see no reason to add it. Avocado is such a great fruit, if its ripe it takes very little to make it awesome, adding too much crap to it IMO just tones it down. A lot of REAL Hispanic foods are very basic, that's one thing I really like about it, once you start adding tons of crap it crosses into the tex/mex crap you can get anywhere in the US.
P.S a good tip for making guacamole, place everything into a bowl and use a flat bottom glass to mush it up, it works better then anything else I've got in my kitchen.

Since OP said 5 minutes, I would have to say get a couple of ripe avocados and add in some salsa, such as Pace chunky. Mix it all together and viola.
If I had more time, the ingredient list would be something like:
Ripe avocado
Chopped yellow onion
Minced garlic
Minced jalapeno
Salt & pepper
Fresh squeezed lemon
Cilantro
Don't be too concerned with the amounts, just add a little more until you find the taste that you like.

I dont see how your more time recipe ( - the corn and lemon and + lime) would take more then 5 minutes, it really is one of the easiest and fastest side dishes to make.
why the **** would you ever mix salsa into guacamole.
I would ban you right now if I could.
Who mixes salsa into their guac?
jeffie, I use the Pico Da Gallo already diced but it's fresh. I like the diced tomato and add only how much I want from the mix. I add the diced onion, diced jalapeno and cilantro along with some garlic. Just a time saver.

+1
I find the lime makes the guacamole. I like to roast the jalapenos then toss em in a ziplock bag to make peeling the skin off easy (this will take 10-15 minutes or so, so I dont do it all the time). I add LOTS of lime juice, cayenne, s&p, onion and garlic, and if i want it really chunky I'll throw in some finely diced tomato. I like to dice the onions up first thing, then toss em in a bowl and sqeeze the lime juice over them and let them sit while i prepare everything else.
