Default Chef knives Suggestions...

I started looking into Chroma 301 knifes and after more research I found some crazy Japanese cutlery at http://www.japanesechefsknife.com.

I like the 301 series shape and that is claims to holds an edge, but some of the Japanese knifes are pretty damn nice too!

Can someone suggest a nice set of cutlery that keeps and edge?

I use Shun knives (8" Chef's, 6" utility and 4" pairing) they have been phenomenal compared to other knives I have cooked with. Not cheap though.

i prefer Shun, but i would recommend going to a reputable cutlery store or kitchen store and handle a few knives and then decide which one feels best.

Misono UX10. You won't regret it. Shun knives are garbage, they just look nice.

edit: Knife brands don't really matter. Just as long as it feels comfortable in your hands.

I've been eying the Misono UX10 knives, but as you say I need to head down to a store and handle a few brands and see how I lime em.

Just throwing it out there, but Global makes some good knives as well.

Also, I wish I had seen the cookoff, I would have entered. We definitely need more of those.

It's too bad you live out east, I only know of some specialty Japanese shops here in SoCal that will actually let you try out those knives.

Global knives are indeed good too, I use my G-16 as my all around knife, but my UX10 for precision cutting. If you're really interested, Global has a special line that's available in Japan only called Global-Pro. The edges are more refined than the original series. You might get lucky finding one on ebay. I see one pop up every few months.
