10-12 Chicken Thighs or 6 Chicken Breasts (butterfly cut) *Note: Use breasts if you prefer white meat - Beginners to cooking meats can use thighs to get a more moist meat as it takes a hell of a lot to cook them dry
3-4 Oz. Goat Cheese
Sauce Ingredients:
1/2 Cup White Wine
1/4 Cup Lemon Juice
2 Tbsp. minced garlic
2 Tbsp. minced onion
10 Tbsp. butter
1 Cup of sun dried tomatoes sliced into thin, short strips.
1/4 Cup Fresh Diced Basil *Note: If you used salted butter, taste the sauce before adding additional salt.
1/2 Tsp. Salt
1/2 Tsp. White Pepper (Black is fine as well. White just has a more mild taste)
Cooking the Sauce:
1. 2 Tbsp butter to a saute pan on med-low heat. Once melted, add the garlic and onion. You want a low heat with continuous bubbles rising from the butter mixture
2. Saute the onion/garlic until they are translucent
3. Turn heat up to medium and add the Wine/Lemon juice. Reduce this by half
4. Once reduced, turn heat to low and add the remaining butter in slowly. (Just cube it up and stir)
5. Add the sun dried tomato, basil, salt, and pepper to the sauce and remove from heat.
Cooking the Chicken:
1. Give the chicken a light coating of olive oil and salt/pepper.
2. Get a fry pan on high heat with a small bit of olive oil in the bottom of the pan.
3. Sear off the chicken for 1-2 minutes per side.
4. Put the chicken in a 350 degree oven for 10-14 minutes depending on the size and thickness of each piece. (Just make sure your chicken is not pink in the middle and the juices run clear. We don't want anyone getting sick here)
Serving:
1. Take your breast/thigh and add a medallion of goat cheese over top of the chicken.
2. Pour sauce over top of the chicken
3. NOM NOM NOM NOM NOM
No pictures because I ate all of mine, but I will probably cook this again in the near future.
This tastes as close to the restaurants food as I could find. Anyone that loves Italian food should give this one a try. If you're not sure about it, give it a try anyway. (I had a house of 4 skeptical people that ate 3 servings per person, lol.)
