I reduced the recipe because I was only cooking for my wife and myself.
2 pounds beef round steak, cut into thin strips
2 tablespoons vegetable oil
1 (10.75 ounce) can condensed tomato soup
1 (10.5 ounce) can beef consomme
4 medium green bell peppers, cut into 1 inch pieces
1/4 cup soy sauce
2 tablespoons cornstarch
1 teaspoon white sugar
1/4 teaspoon ground ginger, or to taste
1/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
1 1/2 cups hot cooked rice
Slice up the peppers and chop up the onion. As I always say-prep your ingredients first so everything finishes together and nothing is left sittiing to get cold while something else is cooking!
Heat the oil in a skillet over medium-high heat, and quickly cook and stir the sliced beef for about 10 minutes, until the saesoned meat (I added a little cayenne pepper to give it a kick) has begun to brown and is no longer pink inside. Remove beef from skillet and set aside.
Whisk together the tomato soup, beef consomme, green peppers, soy sauce, cornstarch, sugar, ginger, garlic salt, and pepper in a saucepan over medium heat. Bring the sauce to a simmer, stir until thickened, and simmer for about 10 minutes, stirring occasionally, until the green peppers have begun to cook. Stir in the beef, and simmer for 20 more minutes until the peppers are cooked and the flavors have blended .
Starting to thicken:
I had a fresh pineapple and I thought it would be a nice ganish/side item so...
I have never cored a pine apple, so being the engineering geek that I am, I used the metal top from a salt shaker to cut it out:
I had wifey make the rice, but she didn't know that it should have been plain white rice and added Sazon, which changed the color a bit. Still perfect rice though. She sauteed some garlic and salt in a little olive oil and then added the water and rice. (not sure why the Mrs Dash is in the picture, but it wasn't used):
Serve the pepper steak over the rice and garnish with the sliced pineapple:
The meal was teh awesome. The pineapple offset the the other flavors perfectly and gave it more of a Hawaiian flair. Highly recommended!
