i have tried to make as true of BBQ'ed smoked ribs 4 times with very little success. for me the 5th time was the charm. i actually was able to smoke them as best i could on a gas grill and get a decent smoke ring.
this is what i did to be able to smoke on a gas grill. this worked extremely well. in addition to follow the directions in this video i also tried to seal the grill as best as possible with foil
1st i started with a rub. i got this rub from foodnetwork.com and it is awesome.
Marlowe's BBQ Dry Rub
Ingredients
• 3 cups paprika
• 2 cups sugar
• 2 cups garlic powder
• 1 cup salt
• 1 cup onion powder
• 1 cup seasoned salt (recommended: Lowery's)
• 1/2 cup chili powder
• 1/2 cup black pepper
• 1/2 cup Black Magic seasoning, recipe follows
Directions
Blend well, cover and store.
Marlowe's Black Magic:
• 2 cups onion powder
• 2 cups garlic powder
• 1 cup cayenne pepper
• 1/2 cup white pepper
• 1/2 cup black pepper
• 1 cup dried thyme
• 1 cup dried oregano
• 2 cups table salt
• 1 cup paprika
• 1 cup ground cumin
Blend well, cover and store.
the Marlowe's Black Magic rub is amazing. i also used it on chicken and fish.
after i made the rub i got out the ribs (i used Beef Ribs for this) and removed the silver skin and trimmed them. i then rubbed down the ribs and wrapped them in foil and stuck them in the fridge for 24 hours.
about 4 hours before i started to cook i soaked hickory chips in water to get them ready.
here they are after 24 hours.
i then got the chips ready, placed them on in the grill and fired her up. i was amazed how well it smoked. it was a bit high maintenance controlling the heat and making sure the chips dont catch fire. i kept the grill between 225 and 275. ideally i wanted it at a constant 250, but that was very difficult.

after about 8 hours of smoking the final product.
then for the sauce i used the Neely's BBQ Sauce less the sugar. i used the brown sugar but not the white sugar. it came out awesome.
Neely's BBQ Sauce:
• 2 cups ketchup
• 1 cup water
• 1/2 cup apple cider vinegar
• 5 tablespoons light brown sugar
• 5 tablespoons sugar
• 1 tablespoon lemon juice
• 1 tablespoon Worcestershire sauce
• 1/2 tablespoon fresh ground black pepper
• 1/2 tablespoon onion powder
• 1/2 tablespoon ground mustard
here it is simmering on the stove.
these ribs took literally took 2 days to complete but it was well worth it. these are by far my best ribs as of yet. enjoy
