I'm looking for an Intermediate Veg. Recipe to cook for the GF next weekend. I am by no means n amazing cook, but I know my way around the kitchen.
I'm looking for some sort of seafood entree other than Salmon (made some recently), possibly scallops or a shrimp (any other options are welcome) dish of some sort, along with pasta or anything similarly appetizing, along with as a side dish that would work well with the entree.
I really want to surprise her with something delicious
All suggestions are welcome!

4 jumbo sea scallops, season each side with blackened fish seasoning
add 2 tbsp butter and 2tblsp olive oil to pan, put on med high, add scallops
cook on one side for 3-4 min, flip them and again 3-4 min. Remove from heat and let sit in warm oven to keep warm while you make your sauce.
sauce- to the same pan that had your scalops in it, put back on heat, add 1tbsp flour, stir into butter and oil mixture, next add 1 cup white wine. Bring to a hot simmer. make sure to scrape the pan off the drippings from the stuck on blackening seasoning. Turn heat off. Cut a lemon in half. Squeeze each half into your sauce, stir then put on top your scallops. A nice angel hair past goes good with this dish. Just put the remaining sauce over your pasta.
Are you sure she eats seafood? Because that's not vegetarian. . .
If she does eat seafood, look up seafood fradiovolo. It's basically shrimp, clams, muscles, scallops, or any combination thereof, in a spicy light-marinara sauce over your favorite pasta. It's easy and very tasty.

Well technically it's called "pescatarian." No meat other than fish. But you get the idea

Yup, I know a few pescatarians. Seafoood fradiovolo was one of my favs back when I cooked at an Italian Restaurant.

You can translate it into almost anything with just a little change in the seasoning. I use almost the same recipe for stuffing peppers, mushrooms, tomatoes and eggplants. You could just remove the red meat and you're good to go.
