Thumbs up xjong's Grilled Chicken breast with T.G.I.F's Jack Daniels' Whiskey Sauce

Since I made an appetizer yesterday, I decided to make a main dish using a chicken breast.
This dish can be a little time consuming but at the same time, it can be a very simple and elegant dish that everyone loves.

I used home made TGIF's Jack Daniel's sauce for this dish. This versatile sweet-and-slightly-spicysauce can be topped on salmon, baby back ribs, steak, chicken, porkchops. This recipe will tells you how to make a clone that tastes virtually identical to the original glaze that you can use it to top your favorite meat, but if you're grilling, be sure to use the sauce just before taking the meat off the flame, since it is very sweet and will quickly burn.


Ingredients

1 Boneless Chicken breast
1~2pc Sliced pineapple
5~6pc Grape Tomatoes
Salt & Pepper

Ingredients for Jack Daniel's Whiskey Sauce

1~2 Heads of Garlic
1 Tablespoon Olive Oil
2/3 Cup Water
1 Cup Pineapple Juice
1/4 Cup Teriyaki Sauce (Recommand Honey Ginger)
1 Tbsp Soy Sauce
1 1/3 Cup Dark Brown Sugar
3 Tbsp Lemon Juice
3 Tbsp Minced White Onion
1 Tbsp Jack Daniels Whiskey
1 Tbsp Crushed Pineapple



Let's prep the sauce first, ya? This sauce takes quite a bit of time until done and you will have plenty of time to prep for your meats & vegetables while the sauce is being ready.

Combine 2/3 cup water, 1 cup pineapple juice, 1/4 cup teriyaki sauce, 1 table soon soy sauce, and 1 cup brownsugar in a medium saucepan over medium heat. Stir occasionally until mixture boils then reduce heat until mixture is just simmering.





Crush the pineapple. Canned pineapple makes it easier!




Crush the garlics. If you oven roast the whole garlic, it is even better.




Sauté the chopped onion.




Wash, trim the fat off from the breast and cut into the center and open up the breast. Pounded to thin. Season with just little bit of salt and pepper. Spinkle and rub with little bit of olive oil. Even better if you use pre-marinated chicken breast with Teriyaki.





Add remaining sauce ingredients to pan and stir.

**IMPORTANT: Let mixture simmer for 35-45 minutes in or until sauce has reduced by about 1/2 and is thick and syrupy. DO NOT keep adding sugars or it will become hardrock when it cools down. Make sure it doesn't boil over or else you will be cleaning kitchen instead of cooking.




Prepare pineapple slices. Fresh one is the best but canned slices do the job also.




Cut grape tomatoes in half.




Let's prep the grill. Before you put the meat on here, brush the grill with oil to prevent from sticking. Chicken loves to stick with the grill.




Grill the chicken. 2~3 minutes on each side.
Have your grill completely heated when the brining is done. With the grill hot, put the chicken over the hottest part of the fire.





Frequently check the Sauce.

If it is too thick, add hot water. If it is too runny, leave it alone for awhile. Again, do not add more sugar to quicken the process or else it will become Jack Daniel's whiskey candy instead. Trust me, I've done that before.
This one looks perfect. Not too runny or too syrupy.





Turn the chicken only once and leave the lid off the grill. Grill pineapple slices.

You want to cook by direct heat, and only direct heat. Timing is very important because of the short cooking time. Be careful not to over cook.
You may brush the chicken with whiskey sauce and quickly grill it for ONLY few seconds before you take it out.




Pan roast the tomatoes right before serving. If you can oven roast the whole bell tomatoes, it's even better!




Plate your final products. Pour some of the whiskey sauce on top of the chicken and coat grilled pineapples. Garnish as you like. Remember, good looking dishs always tastes good too.

It may seems like a long and complicated dish for some.. But once you get the groove, it is actually a simple dish to make. Just concentrate on the whiskey sauce and you will be good to go!
