Default Bass, Grits, Sauce

I will try to organize pictures later

SAUCE
3 pablano peppers
.25 cup red wine vinegar
3 table spoon chopped cilantro
2 table spoons honey
.5 cup olive oil

Grits
3 yellow peppers
28-32 oz Hominy (drained)
1 onion finely chopped
3 garlic cloves
1 cup heavy cream

Main dish of Fish
-Used .75lb bass with plenty of sauce and grits left over

I tried to lay this out in the most efficient time frame, with the roasting of the peppers not allowing the remaining dishes to be prepared simultaneously.



1) Roast all the peppers except for 1 yellow pepper for 30 minutes at 400 degrees. During this time you can prepare the other ingredients.

2) Making the sauce. Combine the seeded and chopped pablano peppers, vinegar, cilantro, and honey in a blender and run until smooth. While the blender is still running add olive oil, salt and pepper to taste, then set aside.

3) Seed the yellow peppers,slice the peppers, add to the cleaned blender then puree until smooth. The finely dice the remaining yellow pepper and set aside.

4) Place half of the hominy in the blender/processor and puree until smooth. Remove the puree and blend the remaining hominy. If your blender can create a smooth puree of all 30 oz’s in one shot do it.

5) In your saucepan heat oil and butter over medium heat. Add onions, season with salt and pepper, and cook until soft. Add garlic and cook for another 2 minutes. Add the Hominy, yellow pepper puree, and heavy cream. Cook for 10 more minutes, fold the diced yellow peppers in.

6) While the Pepper Grits are cooking, cook the fish. Brush the fish with oil on both sides and salt/pepper the fish. Heat a your heavy skillet over high heat until smoking. Cook skin side down 3-4 minutes or until browned. Turn over and repeat cooking process.


Place a mound of grits on the plate with the fish on top, drizzled with pablano sauce.

Bass was $19.99/lb, the ingredients outside of the fish would have made 2-3 lb's fish. Cut everything in half for smaller "Side" dishes - The remaining ingredients should be staple items in the kitchen, but if you need to purchase Olive Oil and red wine vinegar add $10-15 dollars to the total. Remaining items such as peppers and cilantro approx $10. Your mileage may vary on the peppers since they are bought by the pound.

I will remember to include cost in my meals for items not typically bought. This meal can be prepared with any meat/fish if you find that your pallet does not need an expensive item. Salmon, halibut, tilapia, or any variety of fish may be used.

As you speak of grits are you talking about the yellow pepper grits i made or the breakfast grits? I think the terminology depends on what part of the country you are in.

edumicate me man. dont meant to quote a movie but i am not sure what a "grit" even is.

i have had them and they are awesome, but would not have the first idea where to buy them or how to make them.

do you buy grits from a store? or is a grain or something you cook and it becomes grits?

Ahh you are talking about breakfast grits. You buy them in the grocery store and they can be found with the creme of wheat and oatmeal. They are prepared the same way as the other grains, meaning boil some water and let the "grits" "hang out". The preparation of the grits is what you need to learn. The basics are butter, salt, pepper then eat.

are breakfast grits and regular grits in the same section at the grocery store? and are breakfast grits the same as quick or instant grits?

all the same - seems like you are familiar with the instant/quick grits.

I was just differentiating what i made "yellow pepper grits" which has a base of Hominy(a bean) from what i believe you want, "instant grits".
