It looks as though your car handles very similar to mine did at my first test day after I replaced everything in my car and before I started to set up the suspension!
Looking good man, you have the right idea on everything and I don't think anything I could say on here would be something you probably haven't heard before.
What size tires were you running? Part of the reason the car understeered a lot for me (As you can see in the video I had to fight with the wheel a lot similarly to yours) was I was running 265's and I was not ready for that type of drifting yet. Now with full bolt ons i'm running 265's, but that's after a demo earlier when Aaron told me to start running them to drift faster. I'd suggest 235's or 245's, and if that's what you were on awesome!
I know you were saying your VLSD is getting weak, that could also be causing some of the understeer feeling, and also what is your alignment looking like right now?
Looking good dude! Keep practicing and you'll get it down, Z's are super solid cars for drifting. Reliable, easy to drive, and with a few suspension and power tweaks they really become super capable cars.

i was running 225's in the front and 235s/245s in back. i didn't buy any tires for this event i just used the tires that were already on the car and the tires that came on the extra rims i bought. because of the 225s i was getting crazy under steer all day lol i actually had to drive the 4 hours back with corded front tires because i wasn't prepared for the front tires to shred. I just ordered some 245s and I'm just gonna go same size all around for now. and I'm not sure about the alignment i haven't adjusted it since i got it nor do i think the previous owner ever did either. and hell yeah man it would be badass to cruise up together, and i would love your opinion/input on how the cars feels and my driving as well.
