Try to keep this rebuild as pure and simple as possible. Inspect the block for damage, but if there's nothing apparent, just take the crank to a reputable crank specialist. Clean and finish disassembling the rest of the engine yourself if you're capable. You never mentioned how many miles are on this VQ, but you may as well do a full rebuild to prevent having to do it again.

And as for the GT300 details, forget any of that ****. You're probably in over your head just doing a standard rebuild. Don't let any of the stuff they do with a specialized race motors distract you from the basic job at hand.

I was told the motor had 500 miles on it when I bought it. I thought it was bs but after seeing how clean everything is I'm inclined to believe it. Its either that or it was maintained extremely well haha. I've put maybe 1500 miles on it. And yea, I definitely am not doing assembly without assistance because I've never done it before. My uncle is ASE certified and worked as a tech for 35 years so he'll be helping me out and walking me through the rebuild. I printed out the EM portion of the FSM already so we can have that handy. I'll try and get some better pictures of the internals if I can but it may be difficult since the crank is still in the motor.

Maybe I'll keep my spare motor and just work on that if I feel like going crazy with this car.

There's really no need to post any pics of the motor, particularly since you haven't pulled it down yet. But with that low mileage, was this a rebuilt VQ? Do you have any idea who the previous owner sourced it from? Depending on the answers, you'll still need to have the crank worked on and new bearings sourced, but maybe there's other options (warranty) available?

If I remember right it was pulled out of a car that got totaled. Any warranty is probably expired since the friend I got the car and engines from had it sitting in a storage unit for a couple years after he purchased it.

OK- you're officially stuck. No idea of how much original mileage and condition the engine was in (thought it was a commercially rebuilt mill). Your best bet is to rebuild the VQ from the ground up--both top and bottom end--to have the best chance of lasting success. Get an engine stand and get to it. Plenty of rebuilding threads here to get a start on it.
