Quick question. I see how the rigs are setup but how does the equipment not showup in the picture? Do they go back and touch up the photo afterwards and remove that part of the image? Doesn't it cast a shadow on the car it's shooting?

Yes it does. It will have a shadow on the car depending where the sun or light is coming from. Some areas on the car is so hard to clone out. When you get to this point, you will know why you'll want to charge people for photo shoots involving rig shots. Some are very easy to clone out depending what the background looks like. Some are really, really hard. Some will take 3-4hrs to take out........those, really suck.
^it takes me between 10-20 mins to edit out the rig depending on the background. use the clone stamp and patch tool will help lots. motorcycle rig shots will be the most difficult to edit due to the the mounting points (middle of the bike compared to the top of a car)
