Understanding how to dyno-tune aftermarket ems

I would like to learn more about tuning my own car's ems. I have an emanage ultimate on my car now and know it is a very antiquated system and intend on changing it out for a Haltech soon. I believe I have a good local tuner, but I understand there are many tuning tools/parameters available on the Haltech and I want to understand them all.

My question is where can I read up on and learn about tuning both in theory and practically for engine management systems? I would like to understand “maps” and the likes as well as how the dyno is used during the tuning process. I am also researching this myself online but am posting here to request further guidance from the experience of other members of my350z who may have already gone down this path.

I have degrees in engineering and law and believe I am capable of understanding these complicated systems.

I also understand this is some of your occupations and you may not want to divulge secrets of the trade. I assure you I only want to know for my personal benefit. I would appreciate your advice and keep it privileged at your request.

If you follow this link it will bring you to the download of the aempro software. Now i know you said you wanted a haltech but if you download this software it has an EFI Basics information page that explains alot. It is in the form of a pdf and is 52pages long which I have found useful many times when tuning or just looking for some information quickly.

Also, I went and took the beginner and advanced courses at EFI university which were possibly the best classes ever on tuning. This is the website and they also have a ton of info on their forums. The beginner class is mostly reading and asking questions but very in depth. The advanced class is alot more hands on as there are usually only a max of 8 people so its more 1 on 1 and you actually get to tune a vehicle so you have experience and not just book knowledge trying to figure out how to apply it.
