What's the weight printed on the inside of the door?
 
I always thought it was curb weight but looking at my friend's Jetta it said 4000 LBs. No way! A Jetta has a curb weight of about 3000 LBs at most.

So what is it? Max loaded weight?

Yep, it's the highest weight that the car was designed to carry. You can probably do more, but it's not recomended, or even safe. For most cars, 4 people + fuel is real close to the Gross Weight. 4 People + fuel + full trunk = probably not good.

I would think that this is most noticable in heavy braking situations, or emergency manuvers.

Interesting note; find out what the gross weight for an SUV is, then calculate how many people it can carry. Assume 150lbs per person. Usually an SUV full of people is at it's Gross Weight. Now think about how many SUV's you have seen full of people, plus stuff in the trunk, pulling a trailer. Now think about the fact that it's carrying and pulling about twice it's GVW. Now, move over a lane just in case something happens...

On a semi-related topic, does curb weight include the weight of a full tank of fuel or does it only include fluids like oil, windshield wiper fluid, etc...?

Wet weight is with ALL liquids in their containers.

3,197lbs. for the Enthusiast I think... It varies slightly for each trim [and roadster].
