Tons of smoke
Hello,
I’m a new owner of a 2004 350z Touring model with 120k miles, there is tons of smoke coming from my exhaust, especially when I accelerate the car.

Yes, it does have a smell to it, could it be it’s burning oil? The oil meter is low and it goes up then drop when I accelerate

Do a compression/leak down test to see what your numbers are. It looks like coolant burn smoke, but it could also be burning oil. Hard to tell because I can't smell it.. Check your coolant and oil levels(with the engine cold) and top them off if needed. Drive around a little bit to achieve operating temperature(if able to), then re-check both coolant and oil levels(after allowed to cool completely) to check for variances.

The oil pump is driven off the crankshaft and oil pressure is completely dependent on engine rpm and oil temperature. Oil pressure is not related to engine load in any way.

Start with Basic Auto Shop 101 Troubleshooting:
Blue smoke, burning smell = oil
White smoke, sweet smell = coolant (which, as Eyegor pointed out, this looks a lot like.)
White smoke, burning herb smell = SnoopDawg and Tommy Chong are in da house! (Or all the newly legalized "herbists" in CA are partying.) Sorry, couldn't resist .....
Go from there to diagnose/delve into the sub-systems affecting either.
While doing that, you should also pull the DTCs - if any - to rule out or point you to obvious issues.

If you want to know if you blew your head gasket.
Drain the oil. If it looks like coffee or has 2 colors and clearly separation it means coolant is in your oil aka blown head gasket.
Check your intake manifold to see how much oil is in your manifold. You could just be burning oil really badly through the intake/cylinders.
Also like before did you buy it doing this? If you did I really hope you got it for cheap.
