Just running the raw numbers:
FRONT
225/50-17 is 656.8mm in total circumference of factory wheel and tire.
275/40-17 is 651.8mm or 5mm shorter, so your new tires are increasing your wheel gap 2.5mm vs. stock.
Nismo S-Tune lowers 20mm - 2.5mm = 17.5mm drop
REAR
235/50-17 is 666.8mm in total circumference of factory wheel and tire.
275/40-17 is 651.8mm or 15mm shorter, so your new tires are increasing your wheel gap 7.5mm vs. stock.
Nismo S-Tune lowers 20mm - 7.5mm = 12.5mm drop
The Z already sits raked from the factory so you just made it 5mm more so. 1/2" drop in the rear is barely noticeable. And you are right about a full gas tank vs. empty. That's worth another 5mm or so.
If the gap is bothering you, I recommend larger staggered wheels/tires vs. coilovers. You've already invested in the s-tune. They are a nice even drop engineered by Nissan specifically for your car. Drop any more and you will need to invest in camber/toe kits, etc.
275/40 tires are usually what is recommend for 18" wheels in the rear (677.2mm). That would decrease wheel gap by another 12.5mm. If you buy a set of 4, you will have a complete set of spares or you can sell two 17s and two 18s as a set and recoup your money.

I been fighting random impulses to just order the 18"s with 275 or 285/40 for the past few weeks. Unfortunately some *** hit me on the freeway last week and we couldn't see the plates so I'm stuck with a $1000 deductable to paint the right half of the car.
I think I'm just gonna suffer for awhile. I have a bunch of stuff I need to sell, once that goes I'll finish this.
