you're doing these the hard way tracing everything by hand
you can do these sort of images in about 30-60 min each with a few photoshop filters and then adobe illustrator to line trace the image into vectors and then change the major vectors into gradient vectors

I'm not saying your work is bad or anything, it's pretty good
just saying you can have the software trace all the million minor details while you trace the things the software doesn't get quite right and you can guide how the vectors lay across the image via certain filters (not posterization) to create edges to the image before processing it. And you can always tweak a shape that's almost right vs creating the shape from scratch
The movie A Scanner Darkly for instance took 500 hours for 1 minute, or 1440 frames (60x24). So that's under 3 hours per frame. They used their own custom line tracing software in combination with hand tracing and tweaking among other things to get the same basic effect. Last I heard, their work was also considered professional not to mention effective

Awesome work! Just curious, what program are you using to do all this? I'm really interested in this kind of work but i'm not sure where to start. Is it one program your using for the whole project or multiple ones?
As a graphic designer and fine artist, I have to agree with Sentry on this...while I don't want to discourage you, just make sure you understand the difference between creating an original work of art and creating a line-art illustration of someone else's photo. Especially if you are trying to sell it.
On a lighter note, check out hyper-realist Bert Monroy's work. It will make you cry:
