Racing wise, i been shifting at 6,400 RPMs, i just wanted to get a overview on where or where DID people shift when there Zs were stock. OR if people went to 6500+ and got better results?

If you've got a nonrevup motor which I'm assuming since its an 05 Touring... I would only shift at 6.6k in 1st gear since it goes by so fast. Other than that I would shift around 6.2k since thats where the power begins to fall off.
Rev limiter will save your engine but blow your speed as the hesitation is very noticable when it kicks in. Just shift before it kicks in. Gee, I guess that is why the gauge has a red area and there is a flashing red shift light(that you can set) on the manuals. I obviously didn't pay attention once.

I agree. Just before the rev limiter. If you are competing, and bump the rev limiter, may as well call it a day because you lost. More important than the shift point is how far does the RPM drop between shifts.
