yup, you can do that. but i have found that doing it on a level surface is easier and less embarrasing.
this car is pretty easy to stall if you arent paying attention, and its also pretty easy to get the tires loose lol.
i usually keep my eyes on the traffic lights so i can anticipate when my light will turn green, and i start letting the clutch out to where it is just at the friction point before the light turns, so i can ease off the clutch and get a good smooth start

Thing I told my gf when I taught her manual which will save you some frustration: if you feel the car dying, clutch in. Simple, and I am sure you already knew this.

Keep it under 4000 rpms for the first 1200 miles.

wow take the heels off while your learning and don't bring you boyfriend with you..you will only frustrate each other.
after years of driving I still won't drive in heels..i take them off because they mess up the floor mat, lol.
anyway your asking about "heel toe"..just learn the basic of driving manual first and when you feel comfortable you can start messing around with down shifting.

Way back when I got my first car, nothing fancy, an Austin Marina with a 4 spd, my Dad put my in it in the driveway and told me to back up a car length, then pull forward to where I started and then repeat for half an hour so so (well maybe not that long but it felt like it while he watched for the first few trys).
Try this exercise in an empty parking lot somewhere, I am sure that once you are done you will be much more confident in traffic. Try the same for hill starts. Just find the slightest incline to work on. You only need it to be steep enough that the car will roll back if you release the brake.
And like KmanZ said, if you think you will stall just push the clutch in.
Have fun practicing.

I've found it's better to practice with the windows up. when i was practicing I would get distracted by all the wind and traffic noise, but putting the windows up allows you to still hear the engine just fine, and drowns out everything else.
The clutch is not as smooth as other cars, so don't feel bad if you're jerking yourself around a bit. I was having some trouble then I drove my friend's TSX and I felt like an expert. Also, I've heard it takes up to 10k miles for some people to become expert smooth shifters so don't rush it.

i also downshift and release the clutch through every gear as im slowing/stopping. i dont know that this is neccisary, but i think its good practice as it makes sure you dont ever try to start out in the wrong gear 

most of us will likely sell our cars before they hit 200k miles...with that in mind I see nothing wrong with downshifting to slow your car down....a little practice and you'll be doing it perfectly.
