However, I just did a little reading on that caliper, and they don't even make an 8-piston kit for the 350Z, so I guess that is super custom. I wonder how much a setup like that would cost.

When I was shopping for a BBK a few years back, I was still under a great impression from that blue widebody Z sponsored by the Power Enterprise (the only other one I know of that runs those brakes). I got a price on those, it was close to 5,500$. I quickly tucked my tail between my legs and got a simple 4-pot Brembo GT. It proved to be more then adequate.
