Changing Brake Fluid - How much fluid needed?

Hey guys,
Getting ready to flush out the old brake fluid in my 350Z for the first time and change it with ATE SuperBlue. Just wondering how much fluid I will need to change and bleed? The ATE comes in 1Liter bottles, will one be enough, or should I go ahead and get two just to make sure I don't run out.
Also, for the "brake pros", I am wondering what your opinions are on re-surfacing the stock rotors. I am at 25,000 miles and just barely my pads started to squeak. I beleive the rotors are in good shape (no visible grooves, warping, etc), and was just going to leave them as they are (because taking them off and taking them to get resurfaced is such a PITA). I really don't think they should need resurfacing, but is this an 'optional' or a 'required' step.
