I'm a little lost.
If the caliper is "off" as you say and by definition its function is to hold the pads in place and position them against the brake rotor, how is the part that "hold the pads" still on the hub?
Maybe you don't have the caliper "off" you just have it open. In that case there are two bolts on the backside of the caliper that fasten it to the hub. Remove those two bolts and the entire caliper should slide off of the rotor but it will still be connected to the car via the brake line. I hope this helps.

You should be removing a total of three bolts if I remember correctly. One bolt at the top of the caliper to "open" it up and remove the pads(there is also a bolt at the bottom but there is no need to remove that bolt), then another two to unbolt the caliper from the spindle. After the caliper unbolts from the spindle you can then slide it off of the rotor.
