Interior Cleaning Suggestions
The best thing for cleaning is good old warm water on a damp microfiber towel. Unless you're trying to remove grease or some other coating from the interior, you should need to use soap.
To protect it, I use 303 Aerospace Protectant. It's not too shiny or greasy.
Never spray anything directly on the door or other interior panels. It will leave it looking blotchy. Always spray on a cotton cloth or applicator then let it soak in for a minute then wipe the cloth on the door. That helps spread it evenly and keeps the blotchy looking spots to a minimum.

megs interior quick detailer for quick clean and light protection
megs natural shine for more protection
both leave a matte finish and are dirt cheap, work very well and readily available
apc + h20 (very diluted) and mf towel for heavier cleaning

It sounds like that 303 Aero is great for protecting.
What do you all use to actually clean the door panels? I've got water spots that have dried up from rain trickling in when I open the doors. I hate seeing it!

Warm water on a microfiber towel is all you need to clean the doors/interior. Mild soap can be used if you're trying to remove tough spots, stains, or grease. Make sure you rinse good if you use any type of soap or you might leave a soapy residue behind and you'll have worse spotting.
The trick to applying any kind of product on the doors/interior is to spray it on a cotton applicator/cloth then let it soak in for a minute. Then rub the cloth on the door/interior. If you spray directly onto the door/interior, it will leave a blotchy appearance.
