Is this a one-car system like Osiris? Once I go FI I'll move to a different engine management system - could I sell the AP and would it work on another vehicle?
Correct, this is like Osiris, in which you can use it and then take if off the car an sell it. You must, when you take it off the car, disable it from the actual car, or else you cannot transfer the flashing to another.

So the maps are only active when the system is connected correct? If I disconnect it when I take it for servicing it'll revert back to it's regular tune?
no, the maps are flashed to the car and the Unit is mated to the vin number. To take the tune of the car, you just unflash it and it will remove the mating to your car/vin. THe unit does not need to be plugged in to keep the flash going.
