I've seen a few pictures of daytona blue Zs with nice blue engine covers and also some le mans sunset with matching engine covers as well. I'm guessing the owners had their stock covers painted because I looked for aftermarket covers and couldnt find colors to match factory paint.

I have a san marino blue Z and would like to have my engine cover painted to match, any suggestions as to what type of shop would be good for having this done? Or if its a DIY project, what stores/brands I should be looking for to buy paint?

any body shop should be willing to do it, and if you have to ask this many questions on the diy is prolly not for u
