Get a race seat and an aftermarket steering wheel. Problem solved.
Most aftermarket seats drop you lower than stock height and the smaller steering wheel (something like 330mm) should give you the added space you need for your legs.
Only consideration is your size. A lot of the race seats are designed for smaller stature Asian folks (No offense) with little waists. So your choices may be somewhat limited. I think the Corbeau's are fitted for us drivers/racers of the "larger" variety. Check it out.
