I just order a new set of Crawford HF cat's and the Motordyne 5/16 ISO plenum spacer for my Z. Do you guys think that I can put this parts myself instead of paying a mechanic to do it and save some money.

Most definitely on the spacer, I put mine on myself. Make sure to use a torque wrench too. If you have some jackstands and a jack you should have no problem with the HFC. To make it easier I recommend a long socket extension, like 20". An extra set of hands helps and also a breaker bar will make it a lot easier. Oh yeah, and beer too. Have fun.
