i enjoyed meeting with you, maybe i will come down in june to watch
your next event- i dont think i will be ready by then-i need to do some
serious brake upgrades before i go back-my car can't handle the abuse
i put it through the way it is currently set up.

The stock Brembo's are marginal at dissipating heat and at a track like Sebring with 17 turns and 2 long straight aways are destroyed rather quickly. If the heat is not dissipated in the rotor or caliper it is absorbed by the brake fluid causing the water in the brake fluid to boil and the pedal to go to the floor without having brakes.
You would never have the need for a BBK for stret driving or drag racing.

My question to you is, would the stock non-brembos be able to handle an event like this IF the driver is very prudent about their brake use going into the turns? I have wanted to drive Sebring ever since I first bought my Z, but I have avoided it partly because of my brakes.

CHIN is an HPDE (High performance Driving Event). It is not racing, and racing is prohibited. You can drive your car as hard as you wish. Just keep your driving within the limits of your vehicle and yourself. A set of performance pads and fluid will allow better braking.
To Drive at a CHIN event you neeed to pay your annual dues and your entry fee for the event. You must drive with an instructor until he feels confident in your abilities and signs you off to drive solo.

to help answer your question-bbk in front will be a big improvement
over stock calipers or even stock brembos on our cars
i read some good information on Zeckhausen Racing today about
what options are best depending on a persons type of driving
and learned a lot(6 piston vs 4 piston calipers, type a pad vs
type b pad, etc...)check their site out you may find it helpful.
they also have pretty good prices

my brakes working like i want i am going to be able to maintain a lot more
speed and dive in real late to help shave some more seconds off of my lap
times-i know if i get more hp and do not get more brakes i definately will
be spending more time in the runoffs and grass because the car just would
not stop-when i went off in front of you i had foot all the way to the
floor with full pressure and it barely stopped by the middle of the runoff area
my goal is to beat my friend in the advanced group-he has been going there
since the late 90's and his best time is 2:39 i think i can beat that next time
if my plans go right by then(i was running upper 2:40's last weekend)
