I still think VIP is the way to go. Q45's can be had for pretty cheap, leather interior, plenty of room for custom ****(tv's, subs, ect.)

Can be made to look killer, kit, wheels, air suspension, paint, done. I would keep it a simple solid color, nothing too wild.

4.5 liter V8

As far as a shop car, I would think the VIP route would better suit you as well. I think it would fit the bill more being it would show off the wheels, stereo, suspenion, interior work, and engine performance mods. I don't know much about your business but I wouldn't want to show off a custom motor swap car unless you are capable and willing to do this type of work.

+1 on what dustin said....swaps might be out of the question atm...but soon street styles will be equipped and capable of doing all mechanical work...

With the VIP you don't track them. I think the VIP is a good idea though. Make it able to be a daily and show at the same time which is more of what you guys are probably capable of.
