Tires for '06 GT

I've read through the threads but I haven't found what I'm looking for.
I have the stock staggered 18/19" wheels and I'm happy to stay with those. They currently have the stock 245/40 front and 265/35 rear. I need to replace tires and am thinking about going to either 255/40 front, 275/35 rear, or 265/40 front and 285/35 rear. As near as I can tell, even the largest combination will keep me under 3% difference from stock.
Has anyone done this and what was the result. I'm assuming that even with the larger combination that there wouldn't be any rubbing issues but I could be wrong. Also, does anyone have tire recommendations for either of these combinations?

My thought though was that it would give me a bit more rubber on the road as well as reduce the slight amount of stretch you get with the stock tire size. A little less stretch may help protect the rims a bit more.
I'm not terribly well informed when it comes to tires and wheels so I'm certainly open to being educated. Do you have any idea?

What about a good 245 tire vs. a good 255 tire, or a good 265 tire vs a good 285 tire in terms of lateral grip while cornering? Also, any idea if increasing the rear width relative to the front (ie increasing the rear 20 mm while leaving the front stock) will decrease the tendency to overstear?
