I've got 18" Mecury Silver LE37T and the fronts are 245/40/18 and the rears are 275/40/18.

My question is can I go with a 35 or 30 for the rears cause I think they look way too high from the rim.

it will mess with the speedometer and VDC, plus make for a rough ride. but it is your money, your car, do what you want. forget performance.
