Play the averages
When they were first talking about making wearing seatbelt mandatory, all the stories were circulated about how seatbelts were dangerous. If you are in a crash and the car caught on fire you would be trapped by the seatbelt and burn up in the car. This, I am sure, has happened, but compared to all the other times when they saved lives it is a slam dunk.
Same with air bags, I personally know a guy who had his air bag deploy (for reasons unknown, except he was in a Ford) while turning a corner and it caused him to crash. But what are the odds? The side air bags sound like a deal to me.
The reason they are not standard is they are not required and without them they can shave $500 off the MSRP.

Side Airbags are not required by law So they make it an option to lower the MSRP. Corporate mentality. They just killed some people because of that decision.
