The S2000, M3, Porsche and Aston Martin's sell pretty well with a silverstone/grey exterior and red interior. I have red leather seats in my Silverstone as well.

You're right. I guess they figure, the top and sides are the most handled part of the steering wheel, so they color the portion that is less likely to wear.
