1st "Service Engine Soon" Light.....CRAP!
That has to be something serious if the engine dies. I hope it isn't from driving her hard. Today I finally hit 1200 miles without going over 4000 Rpm and have now gone to 6500 rpm about 6 times, Thankfully no problems.

Filling the gas tank with the engine running is a pretty sure-fire way to get the check engine light to come on with newer Nissans. Happens on my buddy's Xterra, too.

Which one was your girlfriend?

Just as a reference point, several years ago one of the emission control devices failed in the car I was driving at the time and gave me the same indications (stall etc). When we got the car home and to the dealer it was a quick fix (part replaced) under the emission warrenty. So I would think that having the dealer check it out would be a good idea.
No I don't remember what part it was, but it wasn't the gas cap.

I have less than break in miles, but i took it to 90mph and approx 5500 rpm today in the Harlem River Drive north freeway. Wow what a beast!
I only have 600 miles but i have shown my car 5000 and 5500 rpm. My mechanic has been fixing porsches and track cars for 12 yrs. He told me to not go crazy but if you strickly keep the engine under 4k and then after 1200 miles you all of a sudden show it 4k+, the engine goes into shock. And it strains the pistons. So he said stay in the 3-5k avg range. But he said "to be honest, the car is under warranty and these engine are made to be driven" I was like hey you must work for nissan marketing :P
My advice is listen to your engine, literally. Dont abuse it. drive it like a normal human being, not michael andretti or driving ms daisy. but the engine needs to see the full range of rpms, even redline, during break in.
