There's a lot to be said about rebuilding an engine, especially a VQ35DE. I would recommend reaching out to Kyle at ImportPartsPro. They are very knowledgeable about rebuilding these engines, whether or not they give you free advice is purely up to them. If they do give you some, you can be confident it's good/reliable.

Terrasmak tells it true, plastigauge is a good way to check rod bearing gaps are within factory specs. But you will need detailed engine blueprints to compare with.

Are you strictly doing crank bearings? Or are you planning a full rebuild? You will need to get the rotating assembly balanced if so.

I would just do it ...

you gotta remember that a really smart guy assembled the engine and put it in the car so if you can be as smart as he is, you can remove, disassemble, reassemble, and reinstall back into the car. The worst that can happen is you gotta swallow your pride and flatbed it into a shop to have them do it...
