Limp Mode at Operating Temps only

I have an 08 350Z Grand Touring Auto with 73k miles. I bought the car after it has been sitting for I want to say 1-2 ish years? When I bought it, everything seemed fine, and I wanted a decent little project. I’ve done as much as I can to the extent of my knowledge and now I’m trying to sell it, but this issue persists and I haven’t a clue on how to fix it.
Im not getting any Dash lights whatsoever aside from an Airbag light. I’ve run a diagnostic reader on it and nothing is popping up. My issue is, the car drives perfect until10 minutes into driving. Then it goes limp and locks the RPMs to 5000, then 3500 then 1500 and 500. I originally thought it was Clogged cats. When I was doing an oil change I realized they were both dented and that would solve my issue. I tried unbolting them but 2 of the 3 bolts seized and snapped. I realize now I probably could have drilled them out, but I took the easy route and cut them off. Nope. No fix to the issue. I’ve seen the Throttle Position learning and am about to give that a go, if anyone has any more information on how to fix it even Diagnose the issue, I will be forever thankful!!!
