350z-2004 car running colder than normal

Default 350z-2004 car running colder than normal

Hey guys recently i have replaced the thermostat with a genuine from nissan due to an overheating issue but now i believe that the car is running colder than normal operating temperature.at crusing its about 176 F whixh i think is a little bit under normal but in traffic it goes up to 203 F . Wondering if anyone faced the same issue i would appreciate an advice .
The car has around 37000 miles with no other issues

this could be a fan problem. can you tell if the fan is coming on when you are sitting in traffic? because you're getting the cooling at highway speed but not when stopped.
