To be honest, if I couldnt get the Z I probably would look into a Nissan Silvia (240sx I believe they are called here) and do an RB or SR motor swap. Car costs around 4-6K, swap about 5-7K installed, suspension and brake setup about 4K if done right, and tuning that beauitiful motor about 5K for the best of the best stuff. Next, throw in a good paint job/silvia S15 front end conversion (4-5K) and your all set at around 24K for a beautiful lookin car with over 500hp easy, and some serious street credit.

You're asking the wrong crowd
Most 350z owners here (I have found) arent really former Z owners like you and I. Therefore they are going to give some wacked suggestions. All those cars you mentioned I have driven or been a passenger in. I can tell you you'll probably be dissapointed. I liked the S2000 until I was a passenger in one. No torque, way too small , didnt look good enough for me. RX8 .....well what do you want me to say . You're right on target about the evo and sti. Suffers in the looks department.
If I wasnt in my 350z, I'd be in a z32tt. No questions. Even over the E36 or E46. The 350z no doubt out handles the z32 and maybe even looks a little better. But those are my 2 favorite cars and I refuse to put my money towards anything else
My advice? Wait for your dealer to deliver your PPW. The moment will be all that sweeter. Don't settle for something you don't really want.

Wait for your Z if you have already signed a contract and put $ down. If not, some of the previous advice about finding another dealer is good. You can find "a" car maybe not the exact one you want.

Well, I guess I'll just reiterate a few things.
I cannot and will not go to another dealer for the car. I have contacted several (sales managers, internet managers, etc), named my car and my price, no hassle, just a quick sale where I KNOW the dealer is making money anyway, and every last one has said they can't touch the price. And I will not spend more. I'm so irritated right now I can't even look at as 350Z and appreciate it. Plus, there are always those nagging concerns (feathering, paint quality, etc). Granted every car has it's issues.
Yes, I could wait, but I'd be without a car for 6 weeks. I don't think any one car is the be all and end all. I have already missed several HPDEs I wanted to attend this summer. I can and do enjoy just about any sporting car I drive to some extent.
Right now I am seriously looking at another E36 M3. Not the fastest, but solid cars and great on the track. Plus it will be cheaper (I'm also house shopping) and will depreciate less at this point.
I would also seriously consider another Z32 TT. But I have browsed around, and I don't see any real prime examples for sale right now.
I go through cars like underwear, so whatever I choose, who knows how long I'll have it.
And like I said, I would need to sell a bunch of parts I already have, and would have to take a [minor] loss on those just to expedite things.
Ah well.
