which models of the 03 Z came with the leather option ?

z.com doesnt talk about the 03 Z ... i know the 05 only the touring can have leather but is this true with the 03 Z?

Not true. Leather was not an available option on the Track models in '03 or '04.....

Yes - in 2003, only touring offered leather. All other models as delivered from the factory, had cloth seats.
