Ok, so i have a 200gig HD sitting around and i was going to do a macmini setup in my car. I wanted to add a video feature to this install. I was thinking of putting about 4 mini cameras for a 360degree view around the car (for races and for security) Is it possible that i can do this and have them record to the HD?
I don't see why not, assuming that
1. you can hook 4 cameras up simuiltaneously to a Mac Mini.
2. there is software that supports simultaneous recording to HD from 4 different devices.
3. the Mini's hardware can handle recordings like that without chugging to a halt.

I'd try using USB camera - the cheap $49 ones - into a USB hub and then into the MiniMac. Recording four video steams is a bunch of data to task the poor little Mini to do but it ought to handle it. I use a Canopus ADVC-100 to record video into my PC via Firewire and it uses up about 5% of my 3 GHz CPU time.
