basic questions on sway bars and handling

assuming you have aftermarket swaybars, what would the pro's/cons be of setting up adjustable sway bars from the different settings?
correct me if I'm wrong on any of this
having the bars set to the stiffest setting will help keep the body from rolling as much with the trade off being the tires can break grip easier because there's not as much give?
I understand why you'd adjust the front or rear different from each other to adjust under or oversteer, but kinda curious about them both being on light/med/hard and how it actually changes the handling.
I have the 350EVO bars both set on the medium stiff setting.
