Hi,

Can someone tell me if 7,845N·m(800kgf) clutch clamping force can handle 550~600WHP? This is the spec for the nismo twin clutch by the way.

no - the twins cerametallic units, like NISMO, are good to about 475-500 whp in my experience and the associated torque levels

to hold that power you will need a triple disk carbon from the likes of ATS/Carbonetics

HP has nothing to do with it- torque is all you need to be concerned about. And on that note, you'd have to do some math using the contact area, frictional coefficients (both static and dynamic), detailed diagrams of the flywheel, clutch, and pressure plate assemblies, yada yada, to even get close to a theoretical number. All clamping force tells you is the Normal force applied to the clutch assembly, of which the frictional force (force preventing clutch slippage) is a factor. You need a lot more info that to come up with your answer.
