Default 2005 base clutch question

N00b here, I have a slight issue and trying to get it figured out before I have to bring it in for further diagnosis.
The issue is the clutch along with the flywheel was replaced about 7,000 miles ago at a shop by the previous owner(I have the receipt it was done in April 2016, and they charged him $2,000!).
With spirited driving, the clutch seems to slip a bit when shifting then grab and go. Also on the hwy if I try to accelerate fast it will slip for a second then grab. It doesn't always do this, usually if it's hotter/more humid out or if I've been driving a while it will slip a little and the clutch will feel more spongy too. It hasn't been severe enough to smell the clutch yet.
I've checked pedal free play and it seems to be about an inch-ish, the fluid in the reservoir was milky and dark, so I took the old fluid out of the reservoir and put in new stuff.
I searched online and can only find specific adjustment numbers for the pedal if I had a jwt clutch, not factory. So I'm unsure if there's enough free play, or too much. Or if just emptying and refilling the reservoir was enough. Or if they didn't bleed the lines correctly, I heard these cars are a pain in the *** to bleed. Or is it possibly the slave/master? I'd hate for it to be the clutch so soon, I got the car it did this slipping but assumed it just needed adjustment.
Thanks for reading this long *** post lol and thanks in advance.

If the clutch is slipping as you describe, it's gone and it's time for a new one. If you had hydraulic issues, it would be hard to disengage, but wouldn't cause slipping.

Perhaps a low-quality clutch was installed, or perhaps it's been abused.

This is the clutch they used...

So the clutch would slip more when it's hotter out or I've been driving it a while pedal spongy as well, and when it's spongy it seems there's more resistance in gear shifting also. And it doesn't always slip, and I haven't smelled burning clutch yet.
Damn that sucks lol guess it's time for a jwt

You may have two separate issues. Try changing the fluid and bleeding the hydraulics. That may fix the spongy pedal feel. But, as I said before, that wouldn't make the clutch slip, because when your foot is off the clutch pedal, the hydraulics basically don't come into play.

Once the clutch starts slipping, it's only going to get worse.
