So can I just get the clutch kit then (friction disc + clutch) or do I need to buy a new flywheel as well?
No, but as was stated, the flywheel should be turned (or since it's a JWT, replace the friction surface. You can either go with the JWT clutch only OR consider/ask if the dealer can cut you some slack on (since they're already getting labor $$... maybe at/near cost?): https://www.z1motorsports.com/clutch...t-p-14238.html
If I plan on tracking on the car and learning how to drift should I get the z1 performance street clutch or will the cheaper stock option hold up well?
If it was my car I would get a NEW flywheel, no questions asked. As far as discs I would ask Z1 but organic discs aren't very fond of being abused to maybe get the puck style.

If it's going to be more of a drift & track application, I wholeheartedly agree with Z03 that you consider a puck style disc, but stay with a sprung disc hub. (Lord help you if you get an unsprung one) HOWEVER, be advised the engagement will be more like an on/off switch. So, that combined with a lightened flywheel is not going to be much fun when on the street.
There's so much involved in your decision. If you put a King Kong clutch in (higher clamping force pressure plate and a puck style disc) you'll quickly find the first weakest link in the system. It snowballs from there, involving the entire drivetrain, just sayin'.
Unsprung is not crazy if organic, usually they have no marcel either so they can actually take some more abuse. That's why nismo offers it that way and adds copper strands to help with heat dissipation. TBH I'd rather go that way myself than a sprung puck, they have no chill and makes it really annoying in traffic.
Ideally I think a sprung organic disc without marcel is a nice compromise, but not many are available
